烤魚片,蔓越苺橘味核桃蛋糕,烤洋芋泥,...Broiled tilapia, cranberry orange walnut bread, mashed baked potatoes, ...

烤洋芋泥

No-knead bread, mashed baked potatoes, and sautéed spring mix.

蔓越苺橘味核桃蛋糕

Cranberry orange walnut bread - a good way to use up the cranberry sauce at hand. I used my banana nut bread recipe, however, substituted cranberry sauce for banana.

烤魚片

Broiled tilapia, and sautéed spring mix with garlic in 30 minutes. I made these two dishes for my younger son. Marinate the tilapia with a mixture of garlic, lemon juice, and oil for about 15 minutes ( no more than 30 minutes). Broil the tilapia for 4 to 5 minutes. ( I did it for 7 minutes.). Add salt and black pepper and serve. I learned this way of cooking tilapia from the Food Network.

烤麵筋 Roasted seitan with garlic

This is the first time I roasted seitan rolls. Brush seitan rolls with vegetable oil and bake at 350 degrees F for 30 minutes. Turn over and brush with a mixture of oil, soy sauce and garlic. Bake for another 15 minutes. Slice and serve.

I think I have over-baked the seitan rolls today - the skin was a little too tough. In fact there is no reason to roast the rolls for 45 minutes, since it has been fully cooked.

焦糖洋蔥口味的藜麥 Quinoa with caramelized onions

Compared to rice or other grains, quinoa's protein content is high. Unlike rice, quinoa contains a balanced set of essential amino acids for human and is a complete protein source. Quinoa may well be a good alternative to rice. This is the first time I cooked quinoa. I'm glad that my husband liked it. However, I'm not sure that I do yet. I will need to experiment various ways to eat quinoa.

I made this dish based on a Mark Bittman recipe. My husband suggested a plain quinoa may even taste better.

素炒米粉和烤球芽甘藍 Vegetarian rice noodles and roasted Brussels sprouts

Oh, how both my husband and I loved this roasted brussels sprouts! In today's vegetarian rice noodles, as delicious as usual, I put carrots, celery, and fried tofu. I used a food processor to shred the carrots and celery and shredding became a breeze.
