Banana pancake - the healthiest version

Ingredients (make 8):

  1. 3 very ripe bananas
  2. 3/4 cup of A P flour
  3. 1/4 cup of unsweetened soy milk
  4. 3 tablespoons of vegetable oil

Directions:

  1. Mix ingredients 1, 2, 3
  2. Put 1.5 tablespoons of oil in a non-stick pan;
  3. Heat at medium setting;
  4. Drop 4 servings of batter onto the pan, one by one, (1/4 cup each);
  5. Heat 3 minutes each side;
  6. Transfer the pancakes to a serving plate;
  7. Add another 1.5 tablespoons of oil to the pan and make the remaining 4 pancakes.
