Ingredients:
- 2 Tbsp olive oil
- 2.5 cups of minced onions
- 1 large red bell pepper, minced, (may be replaced with 1.5 cups of minced onions)
- generous pinch of salt
- 4 cups of plum tomatoes (any type will be fine)
- Sauté the onions over medium high (6-7) until soft about 8-10 minutes;
- Add tomatoes and continue to cook over medium high heat (6-7) until the juices have evaporated, about 25-30 minutes
