Ingredients:
- Bamboo shoots, cut into chunks, 4 cups
- Shiitake mushrooms, big, 6, cut into chunks, about 2 cups
- Oil, 1/4 cup
- Soy sauce, 1/2 cup
- Sugar, 1/4 cup
- Water, 2 cups
- Heat the oil
- Add bamboo shoot chunks and mushrooms and stir-fry for 3-4 minutes until all sides of bamboo shoot chunks and mushroom chunks are coated with oil;
- Add water, soy sauce, and sugar until the water boil;
- Reduce heat, cover and simmer for about 25 minutes.
- Drain and reserve the liquid which is good gravy for making noodles or flavored eggs.
- May serve warm or cold.
