紅燒香菇竹筍 Braised mushrooms and bamboo shoots

紅燒香菇竹筍 Braised mushrooms and bamboo shoots
  • Bamboo shoots, cut into chunks, 4 cups
  • Shiitake mushrooms, big, 6, cut into chunks, about 2 cups
  • Oil, 1/4 cup
  • Soy sauce, 1/2 cup
  • Sugar, 1/4 cup
  • Water, 2 cups
  • Heat the oil
  • Add bamboo shoot chunks and mushrooms and stir-fry for 3-4 minutes until all sides of bamboo shoot chunks and mushroom chunks are coated with oil;
  • Add water, soy sauce, and sugar until the water boil;
  • Reduce heat, cover and simmer for about 25 minutes.
  • Drain and reserve the liquid which is good gravy for making noodles or flavored eggs.
  • May serve warm or cold.
